Green Mashed Potatoes
- 8 large Potatoes
- 1 cup Sour Cream or Garlic Quark
- 1/4 lb. Butter
- Salt and Pepper to taste
- 2 TBSP minced Chives
- 1/2 lb. Spinach
- Extra Virgin Olive Oil
- 1 cup shredded Cheddar Cheese
- Milk
Cook and mash potatoes. Blanch spinach in lightly salted water for 10-20
seconds. Drain spinach and blend with a little olive oil. Combine potatoes
with sour cream, sugar, butter, salt and pepper. Beat until light and fluffy.
Add a little milk for creamy consistency. Add chives and well-drained
spinach and beat well.
